The Best Red Velvet Cupcake Recipe
Preheat oven to 350 degrees F.
Combine in bowl, sift together, and set aside:2 1/4 C. all-purpose flour 1/2 t. salt1 t. baking soda3 Tablespoons unsweetened cocoa powder
Mix together in bowl or large measuring cup, and set aside:1 C. buttermilk1 t. white or cider vinegar1 t. vanilla extract*3 Tablespoons liquid red food coloring
Cream on high speed for 1 minute:1/2 C. butter
Slowly add while continuing to mix on high speed:1 1/2 C. sugar
beating for 1 minute after each addition.
Add the above dry ingredient mixture alternately with the liquid ingredient mixture to this creamed mixture, mixing on medium speed after each addition.
*You may substitute 1-2 teaspoons of red gel-food coloring, and add 3 tablespoons water to replace the missing liquid.)Fill cupcake wrappers slightly more than 1/2 full. Bake in 350 degree F. oven for 17-20 minutes depending on what size cupcakes you are baking.
Do not over-bake!
Cupcakes are done when a wooden toothpick inserted in the center comes out clean.
This recipe makes approximately 24 standard size cupcakes, 36 mini-cupcakes, and about 18 large cupcakes.
Traditional Frosting for Red Velvet Cupcakes
Blend with whisk to remove lumps:3 Tablespoons all-purpose flour1 C. cold milk
Cook over medium to high heat, stirring constantly, until mixture is very thick.
Remove from heat and cool to room temperature.
Cream:1 C. granulated sugar1 C. butter
until light and fluffy.
Add:1 t. vanilla extract
Add this mixture to the first mixture, mixing until well-blended.
The completed frosting should have a texture similar to whipped cream.
Hint: Use a cupcake stand, tree, or tower to display these beautiful cakes.

All you need is:1 White Cake Mix3 eggs1/3 C. vegetable oil1 1/4 C. buttermilk1/4 C. unsweetened cocoa powder3 Tablespoons red food coloring liquid1/2 t. baking soda1 t. vinegar.
Place all of the ingredients in the mixing bowl. Blend together on low speed, then mix on medium speed for 2 minutes.
Makes 24 Red Velvet cupcakesBake at 350 degrees F. for about 18 minutes or until center springs back when lightly touched.
The cupcakes can be decorated with a dusting of cocoa powder, shaved bitter-sweet chocolate, chocolate sprinkles, or any other decorations suited to the occasion.
