Rainbow Cupcakes: How to Make and Decorate

Here's how to make cute cupcakes in all the colors of the rainbow, and decorate them with white icing and a little icing rainbow on top of each cupcake.

Perfect for birthday party fun, or soccer practice treats!

How to Make Rainbow Cupcakes Video

Rainbow cupcakes are fun and easy to make!

Just divide the batter, mix in the food coloring, and put the different colors of batter evenly into the cupcake wrappers.

The results can be spectacular, and your kids or grand-kids will love them!

You will need:

  • 1 White Cake Mix

  • Red, Blue, Yellow, Green, and Violet food-coloring liquid or gel

  • cupcakes

    Follow directions on cake mix box using egg whites only; this will result in whiter batter and clearer colors.

    (Most cake mixes will call for 1/3 cup oil, 4 egg whites, and 1 1/4 cups water.)

    Coloring the Rainbow Cake Batter

  • Divide batter evenly into zip-lock bags.

  • I use a one-cup measuring cup, as it comes out just about right, and you won't have to go back and put more batter in some of the bags.

  • Add small amount of food coloring to each bag.

    Close the bag tightly; knead and massage the coloring evenly throughout each bag of batter.

  • Hint: Start with less food coloring; you can always add more, but you can't take it back out!

  • Cut a small piece of the corner of the zip bag, and squeeze a layer of each color batter into each cupcake wrapper.

  • cupcake will be a bit larger.

  • Bake the cupcakes on 350 for about 16-18 minutes, or until the top springs back when lightly touched.

  • Frosting Rainbow Cupcakes


    When the cupcakes are cool, dip them in semi-melted white or chocolate frosting.

    I use Duncan Hines Home Style Frosting for this purpose.

    Place the frosting in a glass bowl, and micro-wave for 30-60 seconds, stirring once or twice.

    The frosting should be about the thickness of pancake batter.

    If the frosting is too thin, the tops of the cupcakes will show through. In this case, stir the frosting a bit, and wait a couple of minutes for it to thicken, then continue dipping the cupcakes.

    If the frosting is too thick, it will not make a smooth finish on the cupcake.

    I usually have to re-heat the frosting once for a few seconds when frosting a whole batch of cupcakes, as it starts to get too thick before I am finished.


    Decorating Ideas for Rainbow Cupcakes

    Easy decorating ideas for rainbow cup cakes include using sprinkles in colors that match the colors inside the cupcakes.

    You can also use food color gel to "stripe" the inside of a decorating bag, and create colorful rainbow frosting.

    Another idea is to use tube icing in the same colors as you used in the cake batter, and make a little rainbow on top of each cupcake.

    If you don't want to buy all the colors of tube icing, you can use a can of vanilla frosting, divide it into 5 bags and color it the same way you colored the cake batter.

    This takes more time, but you can match the colors inside the cupcakes more closely.
