This recipe is one of the easiest that I know. All of the ingredients are placed in a mixing bowl together, and then mixed; almost like making a cake mix.

Easy Cupcake Recipe
One-bowl Vanilla Cupcakes
Makes about 30 standard-size cupcakes.
Have all ingredients at room temperature for best results.2 1/2 C. all-purpose flour1 3/4 C. sugar3 t. baking powder3/4 t. salt1 1/2 C. milk2/3 C. butter2 eggs1 1/2 t. vanilla
Mix all ingredients on low speed for 30 seconds, scraping sides until all ingredients are blended.
Then beat on high speed, scraping bowl occasionally for 3 minutes.
Pour into baking cups.
Bake at 350 degrees F. for about 14-16 minutes, or until center of cupcake tests ready.
Insert a wooden toothpick into center of cupcake.
Cupcake is ready when toothpick comes out clean.
Do not over-bake, as this causes the cupcakes to become dry.
Easy Cupcake Recipe Frosting Idea
This vanilla icing recipe is both simple to make, and very delicious. It is a perfect icing for our easy cupcake recipe given above.
It is also easy to make and to work with, whether you are smoothing it onto cupcakes with a spatula, or piping it through a pastry bag.
The vanilla, lemon, or orange buttercream recipe can be tinted any color you like by adding a few drops of food coloring.
Be aware that if you add enough food coloring to make a very dark or bright color, you will be able to taste the food coloring in the frosting.
Also, very bright food coloring dye will temporarily color the mouth of whoever eats it!
Making Buttercream Frosting
For all of the below buttercream frosting recipes, cream butter until fluffy; about 1 minute.
Gradually add 2 cups of the powdered sugar (for chocolate frosting, add the cocoa powder at this time).
Slowly add the remaining powdered sugar, beating well.
Beat in the vanilla.
Then, add the remaining liquid (cream, milk, lemon, or orange juice) to reach desired spreading consistency.
Add additional liquid 1 teaspoon at a time as or if needed.
Spread or pipe frosting onto cooled cupcakes.
Vanilla Buttercream Frosting Recipe1/3 C. butter4 1/2 C. sifted powdered sugar1/4 C. cream or milk1 1/2 t. vanilla extract
Chocolate Buttercream Frosting1/3 C. butter4 C. sifted powdered sugar1/2 C. unsweetened cocoa powder1/4 C. cream or milk1 t. vanilla extract
Orange Buttercream Frosting
1/3 C. butter4 1/2 C. sifted powdered sugar1/4 C. fresh orange juice1 t. finely shredded orange peel or zest1 t. vanilla
Lemon Buttercream Frosting1/3 C. butter4 1/2 C. sifted powdered sugar1/4 C. fresh lemon juice1/2 t. finely shredded lemon peel or zest1 t. vanilla
