  • Place the eggs in a cup of warm water for 5-10 minutes.

  • Heat the milk for about 30 seconds in the microwave.

  • Soften the butter in the microwave for 5 seconds on each side. Do not melt!

  • 1 2/3 C. sugar

  • 1/2 C. unsweetened cocoa powder

  • 2 t. baking powder

  • 1/2 t. baking soda

  • 3/4 t. salt

  • cupcakes

  • 1 1/2 C. milk

  • 1/2 C. butter

  • 1 t. vanilla

  • 2 eggs

  • cupcakes

Mix on low speed with electric mixer until all ingredients are combined.

Then beat on med-high speed for 3 minutes.

Optional: stir in one cup milk chocolate chips

Fill cupcake wrappers slightly more than half-full.

Bake at 350 degrees F. for about 15 minutes, or until toothpick inserted in center comes out clean.

Makes about 24 standard size cupcakes or 48 mini-cupcakes

    Helpful Hint

When planning a birthday party for young ones, try making "mini" cupcakes instead of the standard size.

They are just as cute and easy to decorate as larger cupcakes, and are a great size for little appetites.

Mini-cupcake wrappers and baking pans are available at most kitchen and baking supply retailers online and brick and mortar.
