One-Bowl Chocolate Cupcakes Recipe
This cupcake recipe is perfect for Elmo cupcakes!
All ingredients should be at room temperature.
If you don't have time to wait, you can:Place the eggs in a cup of warm water for 5-10 minutes.Heat the milk for about 30 seconds in the microwave.Soften the butter in the microwave for 5 seconds on each side. Do not melt!
Place in mixing bowl:2 C. all-purpose flour1 2/3 C. sugar1/2 C. unsweetened cocoa powder2 t. baking powder1/2 t. baking soda3/4 t. salt
Add:1 1/2 C. milk1/2 C. butter1 t. vanilla2 eggs
Mix on low speed with electric mixer until all ingredients are combined.
Then beat on med-high speed for 3 minutes.
Optional: stir in one cup milk chocolate chips
Fill cupcake wrappers slightly more than half-full.
Bake at 350 degrees F. for about 15 minutes, or until toothpick inserted in center comes out clean.
Makes about 24 standard size cupcakes or 48 mini-cupcakes
When planning a birthday party for young ones, try making "mini" cupcakes instead of the standard size.
