Easter cakes and cupcakes are a tradition in our family, and in many others as well.
There are so many cute and easy ways to decorate homemade cupcakes for Easter that you can really have some creative fun!
Easter Cupcake Decorations
One of the most simple ideas, is to dye coconut with a few drops of green food coloring.
The green coconut can be sprinkled on top of the cupcake frosting, and a few little jelly beans, or other candy-egg-type decorations placed on the "grass" to form a little nest.
Add a gum drop bunny, or small chocolate bunny, to guard the nest, and you have a very cute and easy cupcake decoration!
Another simple idea is to divide the frosting into 4 or 5 bowls, and mix a drop or two of pastel coloring to each bowl.
Spread the frosting onto your cupcakes, and use some white icing to make simple lines or a cross on the top of each cake.
Quick tips for decorating cakes for Easter include using colorful wrappers, and spring-colored sprinkles or decorating-dots.
Kids love to decorate their own cupcakes, so you might want to select several several edible decorations, and let each guest decorate their own cupcake.
White cakes are often used for Easter cakes or cupcakes.
Below is my favorite homemade White Easter Cake recipe.
It is very rich and fluffy, thanks to the buttermilk/baking soda combination.
White Easter Cupcake Recipe
Mix in small bowl and set aside:2 C. all-purpose flour1 t. baking powder1/2 t. baking soda1/4 t. salt
Cream with electric mixer on medium-high speed:1/2 C. butter
Gradually add:1 3/4 C. sugar1 t. vanilla extract
Then add one at a time:4 egg whites
Mixing well after each addition.
Alternately mix on low speed, the dry ingredients to the above creamed mixture along with:1 1/3 C. buttermilk
Mix just until combined.
Fill cupcake wrappers 1/2 full.
Bake at 350 degrees F. for 14-18 minutes to bake 18-24 standard size cupcakes.
Test with a wooden toothpick inserted near center of cupcake.
Cake will not stick to the toothpick when done.
However, be sure not to over-bake, as this will cause the cupcakes to become dry.
