Red Velvet Christmas Cupcakes

Red Velvet cupcakes are the perfect dessert for any special Christmas party occasion.

Everyone loves the delicate chocolate flavor, and the beautiful rich red color of these delicious cupcakes.

They can be frosted with the traditional Red Velvet frosting recipe given below, or you can use chocolate or cream cheese frosting to top these delectable delights!

Christmas Red Velvet Cupcake Recipe

Combine in small mixing bowl, sift together, and set aside:

  • 2 1/4 C. all-purpose flour

  • 1/2 t. salt

  • 1 t. baking soda

  • 3 Tablespoons unsweetened cocoa powder

  • Mix together in bowl or measuring cup, and set aside:

  • 1 C. buttermilk

  • 1 t. white or cider vinegar

  • 1 t. vanilla extract

  • *3 Tablespoons liquid red food coloring

  • Cream on high speed for 1 minute:

  • 1/2 C. butter

    Slowly add while continuing to mix on high speed:

  • 1 1/2 C. sugar

  • Add:

  • 2 eggs

  • beating for 1 minute after each addition.

    Next:

    Add the above dry ingredient mixture alternately with the liquid ingredient mixture to this creamed mixture, mixing on medium speed after each addition.

    *You may substitute 1-2 teaspoons of red gel-food coloring, and add 3 tablespoons water to replace the missing liquid.)

  • Fill cupcake wrappers about 2/3 full.

  • Bake in 350 degree F. oven for 17-19 minutes for standard-size cupcakes.

    Cupcakes are done when a wooden toothpick inserted in the center comes out clean.

    This recipe makes approximately 24 standard size cupcakes, 36 mini-cupcakes, and about 18 large cupcakes.

    Traditional Frosting for Red Velvet Cupcakes

    Blend in medium-size saucepan with whisk to remove lumps:

  • 3 Tablespoons all-purpose flour

  • 1 C. cold milk

  • Cook over medium to high heat, stirring constantly, until mixture is very thick.

    Remove from heat and cool to room temperature.

    Cream together:

  • 1 C. granulated sugar

  • 1 C. butter (room temperature)

  • until light and fluffy.

    Add:

  • 1 t. vanilla

  • Add this mixture to the first mixture, beating with mixture on medium speed until mixture is fluffy.

    The completed frosting should have a texture similar to whipped cream.
